They were such a hit then, that I knew I had to make them again for my little girls big day. Click HERE to head over to Bakerella's site for the recipe.

So, here is my take on the recipe: The ingredients I used (Yay! for Target putting the squares on clearance)

<a href="http://3.bp.blogspot.com/-phwVfNful3A/TdPcronBw1I/AAAAAAAAErA/or6wyrRqf2U/s1600/tball+and+makin+grad.+treats+004.JPG" imageanchor="1" style="margin-left: 1em; *I tried putting the cups in the freezer so the chocolate would not come off the edges, but it did not work (and I even left them in over night) oh well they were still cute ;)
<div class="separator" style="clear: both; It is absolutely one of my faves! We first saw the recipe on Paula Deen (I know, bigger shocker huh? Even bigger shocker, no butter is used) Anyway...it is a STANDARD meal on vacation. We cook the majority of the time we are on vacation and we always like to branch out. We've had versions of this recipe because going to college on the coast there is always a "boil" of some sort. We have tweaked the recipe for our tastes...we like things with a kick =) Not sure how long we will be enjoying shrimp with the oil spill in the gulf so I am glad we were able to get some fresh shrimp for this.

Here is the recipe (and some pics I found on the internet)

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 180px; height: 169px;" src="http://1.bp.blogspot.com/_MmKH4b856Kw/S-igk3bfBJI/AAAAAAAADi4/Eyo5Zc1s9w4/s320/pix-lowcountry-boil-1.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5469798302656431250" />

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="http://2.bp.blogspot.com/_MmKH4b856Kw/S-igkrGprDI/AAAAAAAADiw/X3nwJgLwpaw/s320/lowboil.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5469798299347823666" />

Low Country Boil
Fresh shrimp (usually 2-3 lbs depending on # served) ***can use frozen
Smoked Sausage (2 packs of polish sausage for a larger crowd)
New Potatoes (1-2 bags depending on how many people your serving)
Onions (3-4)
Corn on the Cob (at least 1 cob per person)
Lemons (2-3)
2-3 bags of crab boil (2 will give you just enough heat, so we use 3) (=
Water

You will need a large stock pot for making this recipe.
Cut smoked sausage. Cut new potatoes (do not peel) into quarters. Cut onions into large slices. Cut lemons in half.
Fill large stock pot with water (3/4 way full) and bring to a boil. Put crab boil in. Place sausage, new potatoes, onions, corn, and lemons in pot. Allow to cook until all ingredients are done. Turn off stove and place shrimp in the pot at the last minute. Do Not Overcook Shrimp!
Serve with Cole slaw and cornbread.

ENJOY!!!

Jessica

Cheesy BBQ Sloppy Joes

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 300px;" src="http://2.bp.blogspot.com/_MmKH4b856Kw/S-LasiVDarI/AAAAAAAADgo/M1uY2YShLMw/s320/bbq-sloppy-joes-sl-l.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5468173356245412530" />

I found this recipe in my April 2010 issue of Southern Living Mag. It was VERY yummy, extremely easy to make, and as Jason says "this is a keeper" (in other words we will have it again)

Here is the recipe from Southern Living (where there is an * is my changes)

Makes 4 servings

Ingredients
1 1/2 pounds lean ground beef ***we use ground turkey
1 (14.5-oz.) can diced tomatoes
1 cup ketchup
1/2 cup bottled barbecue sauce
1 tablespoon Worcestershire sauce
2 tablespoons chopped pickled jalapeño peppers (optional) ***I did not use peppers
1 tablespoon liquid from pickled jalapeño peppers (optional)
1 (11.25-oz.) package frozen garlic Texas toast
1/2 cup (2 oz.) shredded sharp Cheddar cheese
Preparation
1. Brown ground beef in a large skillet over medium-high heat, stirring often, 8 to 10 minutes or until beef crumbles and is no longer pink; drain well. Return to skillet. Stir in tomatoes, next 3 ingredients, and, if desired, jalapeño peppers and liquid. Cover and cook 10 minutes.

2. Meanwhile, prepare Texas toast according to package directions. Serve beef mixture over Texas toast; sprinkle with cheese.

Southern Living, APRIL 2010

Enjoy!!!

Jessica

Mexi Casserole

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 240px;" src="http://1.bp.blogspot.com/_MmKH4b856Kw/S8h8wHYu11I/AAAAAAAADX4/WfUGJVuJqe4/s320/mex+cass,+yard+work,+swimming,+house+decor+001.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5460751714245072722" />
The ingredients

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 240px;" src="http://3.bp.blogspot.com/_MmKH4b856Kw/S8h8vnl2h2I/AAAAAAAADXw/HHtTa5eh8zc/s320/mex+cass,+yard+work,+swimming,+house+decor+002.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5460751705710167906" />
brown meat and drain

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 240px;" src="http://1.bp.blogspot.com/_MmKH4b856Kw/S8h8veCFZyI/AAAAAAAADXo/-VVlJJD5MoQ/s320/mex+cass,+yard+work,+swimming,+house+decor+003.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5460751703144228642" />
Stir in 1 TBSP dry cornbread mix, rotel, corn, water and chili powder.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 240px; height: 320px;" src="http://3.bp.blogspot.com/_MmKH4b856Kw/S8h8u-n1isI/AAAAAAAADXg/COkraCywyPQ/s320/mex+cass,+yard+work,+swimming,+house+decor+004.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5460751694712638146" />
Spread into a casserole dish

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 240px;" src="http://3.bp.blogspot.com/_MmKH4b856Kw/S8h8uuV2fyI/AAAAAAAADXY/kZqqUF87-jE/s320/mex+cass,+yard+work,+swimming,+house+decor+005.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5460751690342235938" />
Cover with cornbread mixture.
